When I move from UIF to a provident fund, should I claim the accumulated funds from UIF, or is it automatically transferred to the provident fund? Or do I then use both the provident fund and UIF separately?

Bronwin, UIF is an unemployment insurance fund. You claim UIF (for a few months) when you become involuntarily unemployed. This is a form of insurance, not part of your retirement savings, and you cannot therefore transfer benefits from UIF to a provident fund.
